Yes. I'm using Evolution 1.0.5, and here's how I get to that option:
Choose the Tools pulldown menu, then choose "Mail Settings...". A new
window will open and show you a list of accounts. Choose the account
you wish to modify, then click "Edit". A new window will open. Choose
the "Receiving Options" tab. In the "Checking for New Mail" box, be
sure that "Automatically check for new mail every ___ minutes" box is
checked. Enter whatever number you'd like.
