There are two ways you could do it. One is to specify what directories
you want to back up (whitelist), the other is to back up everything except
certain directories (blacklist). You might want to back up
/{{,s}bin,usr,lib} once (as they will change very little week to week).
Think carefully about whether any data in /var/spool/<server> will be
useful to have in a backup. /var/spool/cron, probably.
/var/spool/mqueue, maybe. /var/spool/news, probably not. Avoid /var/tmp,
if that exists in your distro.
